I was ked asked to review Eggland Best Eggs and I received product/compensation forthe review. But, as always, the review contains my thoughts and opinions.

I always buy Eggland’s Best eggs because I appreciate the nutritional value. Each Eggland's Best egg is full of healthy protein and more of the vitamins and minerals we need compared to ordinary eggs. They have less Saturated Fat and calories than ordinary eggs and more of the good stuff like Omega 3’s, Lutein and vitamins D, B, and E.

I especially like that the hens are fed a wholesome, all-vegetarian diet consisting of healthy grains, canola oil, and a supplement of rice bran, alfalfa, sea kelp, and Vitamin E.  The Eggland’s Best hen feed contains no animal by-products and no recycled or processed foods.  Eggland’s Best never uses hormones, steroids or antibiotics of any kind.

This is important to me and my family. And important to my recipes. One of my very favorite recipes is one that has been in my family for many years. It is called “Eggs Betsy”. Originally created by Aunt Betsy and happily recreated by many family members throughout the years. It is a mouth-watering egg casserole perfect for any brunch or dinner. 

One of the ingredients is ham and in Illinois pork is a major product produced.  As a matter of fact, Illinois is the 4th largest producer of pork in the United States. So, it is a very easy recipe that brings a little taste of Illinois with it. We make it for Christmas Day brunch every year. It is prepared on Christmas Eve and refrigerated overnight. So, all you have to do is throw it in the oven and let it cook while you enjoy your family opening their gifts. And you can count on the fact that your dish will be perfect knowing that you used Eggland’s Best eggs.

Eggs Betsy


8 Eggland’s Best eggs, beaten          
3 s milk                                      
Minced onion (to taste)
1 tbl. dry mustard
4 English Muffins
½ lb. Ham sliced
½ lb. Swiss cheese sliced
½ lb. Cheddar Cheese sliced





Mix eggs, milk, minced onion and dry mustard. Line 9x13 pan as follows:

Split 4 English muffins and line bottom of pan with four halves. Next layer ham, then Swiss cheese and top with cheddar cheese. Pour egg mixture over top. Cover with tinfoil and refrigerate overnight.
Cook at 325 for 1 hour. Let sit 5-10 minutes.
