Everyone in our family loves this cake, so we thought we would share it with you! It's great alone or served with a little vanilla ice cream. We hope you enjoy it as much as we do.
Chocolate Cake
What You'll Need
- 1/2 cup shortening
- 1/2 cup boiling water
- 1 egg
- 1 cup sugar
- 1/2 cup milk
- 1 teaspoon vanilla
- 1-1/2 cup flour
- 1/2 cup unsweetened cocoa
- 1/2 teaspoon salt
- 1 teaspoon baking soda
What You'll Do
- Pre-heat oven to 350.
- Grease 8x8 pan and set aside.
- Combine shortening and water in mixer at low speed.
- Turn the mixer up to medium and beat in sugar and egg.
- Add milk and vanilla and mix until combined.
- Add the flour, salt, soda, and cocoa and mix at medium speed for 2 minutes.
- Pour into prepared pan and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
- Place the pan on a wire rack to cool for 10 minutes.
- Remove the cake from the pan and cool on the wire rack until completely cool, then frost with white mint frosting (recipe follows).
White Mint Frosting
What You'll Need
- 4 tablespoons shortening
- 4 tablespoons milk
- 16 oz package confectioners sugar
- 1/4 tsp peppermint extract
- 1 heaping tablespoon marshmallow creme
- Colored nonpareils (if desired)
What You'll Do
- Beat the shortening and sugar together in a mixer at medium speed.
- Add the peppermint and milk to make a smooth frosting.
- Mix in marshmallow creme until combined.
- Frost cake and, if using, sprinkle the colored nonpareils on top.
